How to cook Khao Niew Ma Muang (Mango Sticky Rice)

To make Khao Niew Ma Muang, you will need the following ingredients:

For the sticky rice:

  • 2 cups of glutinous (sticky) rice
  • 2 cups of water
  • 1 cup of coconut milk
  • 1/2 cup of sugar
  • 1/2 teaspoon of salt

For the mango:

  • 2 ripe mangoes, peeled and sliced

For the topping:

  • 1/2 cup of coconut milk
  • 2 tablespoons of sugar
  • 1/2 teaspoon of salt

To make the Khao Niew Ma Muang, follow these steps:

  1. Rinse the glutinous rice in a fine mesh strainer until the water runs clear. Place the rice in a large pot with the water and bring it to a boil over high heat.
  2. Reduce the heat to low, cover the pot, and simmer the rice for 20 minutes, or until the water has been absorbed and the rice is cooked.
  3. In a small saucepan, combine the coconut milk, sugar, and salt. Cook the mixture over medium heat, stirring constantly, until the sugar has dissolved.
  4. Pour the coconut milk mixture over the cooked rice and stir to combine. Cover the pot and set it aside to steam for 10 minutes.
  5. Meanwhile, prepare the mango by peeling and slicing it into thin wedges.
  6. In a small saucepan, combine the coconut milk, sugar, and salt for the topping. Cook the mixture over medium heat, stirring constantly, until the sugar has dissolved.
  7. To serve the Khao Niew Ma Muang, place a portion of the sticky rice in a serving dish. Arrange the mango slices on top of the rice, then drizzle the coconut milk topping over the mango. Serve the dish immediately. Enjoy!
