Ingredients:
- 1 lb bone-in, skin-on chicken breasts
- 4 cups of chicken broth
- 2 cloves of garlic, minced
- 1 small white onion, quartered
- 1 thumb-sized piece of ginger, sliced
- 1 tablespoon of salt
- 1 cup of uncooked jasmine rice
- 2 tablespoons of vegetable oil
- 2 cloves of garlic, minced
- 1 small white onion, finely chopped
- 2 tablespoons of minced fresh ginger
- 2 tablespoons of soy sauce
- 1 tablespoon of rice vinegar
- 1 tablespoon of sugar
- 2 teaspoons of chili flakes
Instructions:
- In a large pot, bring the chicken broth, garlic, onion, ginger, and salt to a boil over medium-high heat. Add the chicken breasts to the pot and reduce the heat to low. Simmer the chicken for 20-25 minutes, or until it is cooked through.
- Remove the chicken from the pot and set it aside to cool. Strain the broth and discard the solids.
- In a small pot, bring 2 cups of the strained broth and the rice to a boil over medium-high heat. Reduce the heat to low, cover the pot, and simmer the rice for 20-25 minutes, or until it is tender.
- Meanwhile, heat the oil in a wok or large frying pan over medium-high heat. Add the garlic, onion, and ginger to the pan and stir fry for 1-2 minutes until fragrant.
- Add the soy sauce, rice vinegar, sugar, and chili flakes to the pan and stir to combine.
- Shred the cooled chicken into bite-sized pieces and add it to the pan. Stir to coat the chicken in the sauce.
- To serve, place a portion of the cooked rice on a plate and top it with the chicken and sauce. Garnish with additional chili flakes if desired.
